When we think about Italy, we normally picture food full of flavour, lovingly prepared by an Italian mamma for hours and hours. These days though we all lead busy and frantic lives, even Italian women such as me, but all the same we needn’t compromise on taste and can quickly prepare a satisfying and easy Italian snack such as bruschetta, if you follow the 4 steps below.
This simple starter is found from Tuscany all the way down to Puglia in the south of Italy.
- Buy good quality country bread and slice to 1 inch thick. I use a round French ‘Pain de campagne’ from Sainsbury’s.
- Toast until golden brown. While still hot, rub your slice with good extra virgin olive oil on one side (I use Napolina’s oil) and then rub with crushed whole cloves of garlic (you need half a clove for each slice).
- Season your cherry tomatoes (the ones on the vine have more flavour) with salt, pepper, a dash of olive oil and some balsamic vinegar.
- Arrange your tomatoes on top and over everything scatter some coarsely chopped basil and enjoy!
You can also enjoy bruschetta as a snack throughout the day and I guarantee that once you have made it yourself, you’d never want to go back to eating it in any of the Italian food chains around!
